I have changed my view of pina colada in not-summer

So I'm prostrate on the couch, covered with the cat's favorite afghan, exhausted after what seems like at least three weeks without my requisite amount of sleep...and Hubby says, well, maybe you'd like a cocktail? I picked up some pina colada mix when I was at the store? And I'm feeling like, "I'm so tired it makes me cold just thinking about it..." and it turns out I said it aloud, so he says, well, why not make an individual-sized batch, pour it into a coffee mug and pop it into the micro for just a bit, to see what that's like?

I will take this moment to say...WOW! This winter version of a summer favorite made my husband into at once a saint and savior. This is like a still warm-from-the-oven creamy pineapple upside down cake made with liquor. You haven't LIVED until you've tried this...use coconut rum, just to be safe....

Cisco - gotta love 'em!
